Chilli Sea Bass Stir-Fried

Ingredients:
  • Whole frozen sea bass 1 pc
  • Tempura batter flour 2 tbsp
  • Salt ¼ tsp
  • Black pepper ½ tsp
  • Chopped garlic 2 tbsp
  • Chopped coriander root 1 tbsp
  • Chopped chili 2 tbsp
  • Chopped spring onion 1 tsp
  • Oyster sauce 2 tbsp
  • Fish sauce 1 tbsp
  • Sugar 2tsp
  • Vegetable oil 1 tbsp
  • Water ⅓ cup
  • Corn flour 1 tsp
  • Water (for corn flour mix) 3 tbsp
Cooking methods:
  • Cut sea bass into bite size, season with salt and pepper. Coat fish pieces in tempura flour batter then deep fry in medium heat oil. Let it sit then set aside.
  • Put some oil in the pan for fry then add garlic and coriander root into the pan until it turns golden. Now add chili, stir a little then add water, oyster sauce, fish sauce, and sugar. Mix well then add corn flour mix in when the sauce is bubbling and stir until it thickens.
  • Add deep-fried sea bass into the pan. Coat well with sauce mixture then it is ready to be served with spring onion sprinkled.
